Admirable focus on sourcing and sustainable philosophy over traditional heavy sauces. While technically perfect, the food flavor profile felt overly intellectual—and a bit underwhelming.The local wine pairing was a bit inconsistent; some of the pairings was slightly disconnected from the dishes, occasionally missed the mark on balance and acidity.The staff is warm, deeply knowledgeable about their eco-conscious concept, and provides a polished experience.

An absolute gem in Strasbourg and a must-visit for anyone who loves casual fine dining without the stiff, formal atmosphere! We had an incredible evening at de:ja. The food is outstanding—offering deep, intense flavors with a strict focus on hyper-local ingredients and sustainability (they absolutely deserve that Green Star). They brilliantly reimagine traditional French and Alsatian dishes with so much creativity and passion. But what truly made our night special was the outstanding hospitality. The young team is incredibly warm, welcoming, and genuinely passionate about what they do. You feel right at home from the moment you walk through the door. A huge recommendation from us!

Weekday lunch for €48 is a great value. Food was good but not amazing. Many natural wine, 2 orange wine by the glass.

Our Taxi dropped us off infront of a rather unassuming door. We rang the doorbell a few times until we were finally let in. The restaurant its self is dimmly lit creating a nice and cozy atmosphere. We were greeted with a very acidic drink made from regional herbs to cleanse our palettes. Next we were offered a herbal cocktail that was way to sweet in our opinion. The menu that followed was somewhat comical due to the fact that we managed to find faults in every single dish served to us. Some of these faults included undercooked dough, grainy and bitter sauces, very oddly texture meat which made it inedible, dry meatballs, oversalted sauces, stale tartlette crust and an overly thick crust of chocolate on the final magnum dessert. The cured fish dish was the only one we were able to truly enjoy. Fantastic balance of flavours. We appreciated that the restaurant provided the correct wine glasses but felt confused by them not offering any napkins until after the charcuterie dish, given that all the previous dishes had been finger-food. We loved how the menu was written in the form of a story as it really tied the whole experience together.

I was taken there for my birthday and it was such an amazing experience in terms of food, drinks and warming service. They have unexpected bites that will make you enjoy each one of them. We liked the vibes / team working there and we would come back again for sure.

Had the lunch set which is super good value. The team was also very kind and the table setting elegant. However note that this is best saved for a day when you have plenty of time- i took the reduced menu and it was already a 3 hour experience! Would love to have a knife and fork rest like theirs at home!

Fantastic restaurant with beautiful, creative food and amazing staff. The food was so well thought out and interesting (even the bread and butter was delicious). Though we did not speak French, the staff went out of their way to explain the dishes and wines to us in English and created such an amazing experience. We were very appreciative. Would highly recommend this restaurant to anyone and everyone.

3.0 The Organic Travels

Beyond disappointed is an understatement. The overly positive reviews of this house are clearly from people who have never dined at a proper Michelin restaurant. The food was good and I mean just good, nothing memorable. There is a huge difference between good food and phenomenal food. There is a huge difference between decent service and service with precision and without flaw. The team at De.Ja is young. I respect the Chef for giving the opportunity to his young team, but the service was disjointed, strange, rushed, non caring, and such a big language barrier. This was the first time I felt like I was in a foreign country of all the times I have visited France. For this price point- service, dining, and ambiance should be on point. There is no sommelier at this house, no one introduced their self, no one brought a wine menu, I honestly can’t even explain how bad this experience was. My empty wine glasses literally sat on my table until dessert. I don’t like leaving negative reviews, but this establishments needs refinement. I would say high quality cooking but definitely not worth a Michelin star. I’ve learned that I appreciate a well seasoned Chef, Staff, and years of experience when paying such a high price point. To top it off we were celebrating my husband’s birthday- no one wished him a Happy Birthday and I communicated via email to have them prepare a special dessert. Someone even confirmed by text message before our dinner that the dessert was prepared. Instead we received strawberries with honey, bee pollen and flowers. If you call a bowl of strawberries for 28 euros a special birthday dessert then you must be crazy. Mind you I set this up a month in advance. This house must not have a pastry chef either because they clearly don’t have a sommelier. I have dined at quality establishments that are not Michelin and they have prepared a gastronomic dessert.
